I use a food-safe bucket (Encore Plastics makes cheap buckets ... and they are food grade plastics if white in color <-only applies to Encore brand) from Lowes with just a towel covering the must for the first 72 hours. I put an airlock on the bucket then let sit for another 48 hours, and then siphon into my secondary. This seems to work really well. Agreed.
